Celebrate with Cupcakes

Nothing makes a better party than cupcakes. If you are looking for an impressive dessert for Memorial Day or July 4th give these Red, White and Blue cupcakes a try. I have seen these cupcakes on the web and thought I would give them a try.

You can use either a white cake mix or make the cupcakes from scratch. I like using all natural ingredients so I picked this Vanilla Cupcake recipe.

Vanilla Cupcake Recipe

Red, white and blue cupcakes

• 2 1/2 cup cake flour
• 2 1/2 tsp baking powder
• 1 tsp baking soda
• 1/2 tsp salt
• 4 eggs
• 1 1/2 cup sugar
• 1 tsp vanilla extract
• 1 cup canola oil
• 1 cup buttermilk

1. Preheat an oven to 350 degrees F (175 degrees C). Line two – 12 cup muffin pans with paper baking cups. Using a large bowl stir together the flour, baking powder, baking soda, and salt. Set aside.
2. Beat the eggs and sugar with an electric mixer on medium speed for about one minute. Stir in oil and vanilla until evenly blended.
3. Blend in the flour mixture alternatively with the buttermilk until just combined. Scrape down the bowl as needed.
4. Divide the cake batter into three separate bowls. Color one part red, one part blue and leave the other part with no color added. To color the batter add a few drops of food coloring or Wilton Gel Coloring and stir into the batter. Add more coloring as needed to reach the desired shades.
5. To fill the cupcake liners, layer the batter into the liner by using one third blue on the bottom, one third white in the middle and one thrid red on the top. Fill the liner until 1/2 to 3/4 full. Bake in the preheated oven until a toothpick inserted into the cake comes clean, about 12 to 15 minutes.
6. Cool in pan for 5 minutes. Then remove and place on wire rack to finish cooling.

After the red white and blue cupcakes are cooled you can ice them with Buttercream Frosting or Chocolate Fudge Frosting . Top with red, white and blue sprinkles. See the video below on decorating your Fourth of July Cupcakes.
