Royal icing has been used for many years when a large amount of flowers or other decorations are needed.  You can make up your decorations days ahead of time and store them in an air tight container at room temperature until you need them for you cake.

The recipe is fast and easy to make as long as you remember to stay away from using any plastic materials for mixing, as they tend to retain any previous greases that may have been used on them.  But if the plastic has never been used before, it is okay.


Royal Icing Recipe

Things You’ll Need:

  • A stand up mixer like a Kitchenaid.
  • Sifter
  • Rubber Spatula
  • Food Coloring
  • Glass or metal mixing bowl (no plastic!)
  • Wooden spoon (no plastic spatulas!)


  • 5 tbsp warm water
  • 3 tbsp Meringue Powder
  • 4 cups powdered sugar, sifted
  • 1 tsp. clear vanilla extract


  • In the mixing bowl, combine the dry ingredients
  • On low speed, gradually add the water, a little at at a time
  • Add a tsp of corn syrup
  • If adding extract, add it now. Make sure it’s clear or it will add color to your white frosting.
  • Mix on low speed until mixed
  • Then, beat at med-high speed for about 7 minutes, or until it forms stiff peaks.
  • If you want to add color now is the time. Mix until incorporated.

Now you’re ready to make your flowers or other decorations!  You will need your piping tools and supplies and some wax paper to get started.
